Switch Payment Processor to Paddle

We currently use Stripe for payments. Switch to Paddle as the payment processor to simplify tax handling and improve the checkout experience. Key Steps: Research Paddle integration and compare with current Stripe setup. Implement Paddle checkout flow. Migrate existing users and subscriptions. Test billing, refunds, and webhooks.

I highly suggest to NOT DO this. Paddle is one of the worst payments processors ever. No one will ever come to you because you did not pay VAT anyway. For example Vercel didn't pay VAT for years until it was a 10 billion dollar company https://x.com/adamwathan/status/1980694611728249043

I'd suggest looking into Polar.sh too. They currently have a low, if not the lowest fees for any MoR (4% + 40c vs 5% + 50c for Paddle)
